How do somms make money?
I know that sounds like a stupid question but hear me out. A few months ago I was promoted to the position of wine director for one of the most successful restaurants in my city. I also still serve tables occasionally and have separate pay rates for each job. I'd like to eventually create a somm position in which I work the floor providing wine service to guests on our busiest nights.
What I'm unsure of is how I'd be paid while doing this. I've yet to ask but I doubt my boss would want me at the WD rate and I wouldn't expect servers to be solely responsible for tipping me out. The only thing I've come up with is working at my server pay rate and having the other servers tip me out, say, 2% of their wine sales for the evening.
Can anyone shed some light on this situation?
